Edamame Ginger Dip – A Beautiful Spring Recipe

Spring is my favorite time of year!! The bright greens, pinks and yellows wash away any winter blues I may have. Having spent the first 30 something years of my life in Florida I had never experienced them! If spring hasn’t sprung yet where you are, try this light and fresh Edamame Ginger Dip. It is such a beautiful green color and is sure to brighten your day. The ginger dressing by Naturally Fresh® adds a spicy kick and is free from artificial flavors, colors, and preservatives.

I love that it is simple and requires only the purest ingredients! Shelled edamame, lemon juice, olive oil, garlic and Naturally Fresh Ginger Dressing. You can taste the spicy ginger and sweet carrots in the dressing and it is the perfect complement to the fresh, clean flavors of the edamame.

I quickly boiled the frozen, shelled edamame beans for 5 minutes and popped them in the food processor. Next add olive oil, lemon juice, and the peeled garlic clove. Blend while adding the reserved boiling liquid until it reaches a smooth consistency. Add salt and pepper to taste and scoop into a serving dish.

I loved the pita chips but you can also use little toasts or sliced baguettes if you want a fancier presentation.
