Every year we pack up the kids and the presents and head to either North Carolina (his family) or Florida (my family) for the holidays. This year we have decided to stay put here in Atlanta! Between neighbors and a some local family members we will spending our first Christmas in our own home. I couldn’t be more excited. That also means this year I am in charge of making all the Christmas goodies for my husband. His mother always has loads of yummy baked goods and I have promised to make as many as I can. Basically, I am gaining 10 pounds for Christmas. You’re welcome darling. 🙂
On the top of Eric’s list of favorites are peanut butter balls, sausage balls, and pecan turtles. Today I thought I would share the chocolate caramel turtle recipe with you. It is so easy and delicious and it packages beautifully for great gifts!
You only need three ingredients:
- Chocolate Morsels
- Caramel Bits
- Pecan Halves
And just a couple of tools. Parchment paper or wax paper makes clean up super easy and these microwave safe Rubbermaid TakeAlongs are great for melting the chocolate and caramel as well as packaging for storage or gifts. Mine were located in a separate Christmas section in my local Walmart and in the aisle with the baking and food storage items and come in red, green, and a holiday print!
First I used the deep square Rubbermaid TakeAlongs to melt the chocolate morsels and caramel. Microwave the chocolate for 2 minutes and stir, continue at 30-second intervals until the chocolate pours easily off a spoon. The caramel should be microwaved at 30-second intervals until it also pours off the spoon. Try using a plastic baby spoon. It’s a great size and the caramel slides easily off of it.
Look at how easy it is!
Put down some chocolate and slap on some pecans!
Add some caramel….
And chocolate and BAM! Pure yummy goodness!
- 1 Bag Semi-Sweet Chocolate Morsels
- 1 Bag Caramel Bits (Or Squares)
- 1 Bag Pecan Halves
- Melt chocolate morsels in the microwave for 2 minutes, stir and continue at 30 second intervals until it pours smoothly.
- Melt Caramel in microwave at 30 second intervals until smooth.
- Place parchment or wax paper on cookie sheet and pour small amounts of chocolate 2 inches apart.
- Place two pecans (more or less) on each chocolate section.
- Pour melted caramel on top of pecans.
- Cover caramel and pecans with chocolate.
- Cool in fridge until hardened.
